2020 Gewurztraminer Pet Nat
Bottled when ferment running at 6.5g/L RS, so quite near end of ferment, the theory being that this would result in a bottled wine at a pressure of around 2-3 bar. Looks like we ended up a bit bubblier than that, with a bright bead, dry, light-bodied with Gewurztraminer aromatics – lychee, nashi pear and cut flowers plus lots of fermentation esters. Takes me straight back to vintage and tasting happy ferments.
Think sparkling mineral water on a hot day in a park, refreshing and crisp.
